Basil is the One Indispensible Kitchen Herb

One of most common herbs used to flavor sauces, meats, and tomato recipes is basil. Here are some varieties of basil: 

• Genovese (green, a very flavorful Italian stock)
• Anise (green with some purple, anise flavor and aroma)
• Mexican Basil (green, with a sweet spicy flavor and aroma)
• Cinnamon (green, with a cinnamon flavor and aroma)
• Large Sweet (green, a large plant that produces well)
• Lemon Basil (green and delicate with a lemony flavor and aroma)
• Spicy Globe (green, with a superb spicy flavor)

All basil varieties prefer lots of sunshine. The soil should be rich, moist, and slightly acidic. These plants do not like the cold. I recommend planting only when you are sure the temperature will stay above 40F degrees.

Basil makes for a wonderful herbal tea that can ease a stomach upset generally caused by anxiety. For those dark-haired readers out there just use this tea as a rinse to regaining luster to your hair. The more aromatic varieties are great for potpourris.

Basil can normally be found in the early spring at your local garden centers. They are easily grown under lights until you can get them in the ground. If you are going to grow from seeds I would recommend you start them six to eight weeks before your garden planting date. The garden centers may not have the variety of basil you want, so planting from seed may be your only option.

Freezing is the best way to prepare and store basil. It loses too much flavor when trying to dry it. For peak flavor pick basil when the flowers begin to open. Wash off the stems, remove the leaves and blend them in your Kitchen Blender with just enough water to liquefy the ingredients until a smooth paste forms. Spoon this mix into cupcake cups, filling them with the same amount as you would in cooking. Freeze the basil. Store the finished product in plastic freezer bags.

You now have indispensable basil to use year round in your favorite recipes.
